The snow is finally melting here in Wisconsin and we’ve seen a few birds fluttering around as well. Sure signs of spring here in the frozen tundra! When we think of spring, we think of fresh fruit, veggies and spring & summer food, including sandwiches and Paninis! Paninis are a favorite in our house, though we don’t make them as often as we’d like. But, with fresh veggies and local meat & cheese I’m much more likely to make them as a weekend treat for the family. The Herb Turkey, Bacon & Veggie Panini is a family favorite.

While shopping for one of our Door to Door deliveries, I decided to add all of the food we’d need to make our favorite Paninis to our next delivery.
Look at that bacon! So, so good. Some of the best we’ve ever had.Ready to make a delicious lunch that everyone will love? Herb Turkey, Bacon & Veggie Panini:
Will make 4 Paninis.
Fresh sliced Sourdough (1/2 inch thick or so), 1 loaf
Green Leaf Lettuce
Herb Turkey (sliced), 1/2 lb
Smoked Turkey Breast (sliced), 1/2 lb
1 package Bacon, 1lb (we cooked ours in the oven prior to making the Paninis)
Peppers (sliced thin), 2 small of each red, yellow and orange
1/2 Red Onion (sliced thin)
Cheese (choose your favorite, we like Cheddar, Muenster & Monterey Jack)
Spray a bit of coconut oil spray on your Panini grill and toss the onions & peppers on there, close it and let them grill for 1-2 minutes. Remove from grill and set aside. Spray the grill again, lay down your first piece of bread and start layering- 1/2 of your cheese, then the meat, bacon, onions, peppers and then the remaining cheese. Place your other piece of bread on top and grill for 3-4 minutes (time may vary depending on your Panini grill). Remove your Panini from the grill when it’s a nice golden brown and the cheese is melted. Open the bread and toss your lettuce inside. Slice the Panini in half and serve. Enjoy!
