I’m a planner, by nature. Ask anyone who knows me and they’ll immediately agree. And when it comes to meal planning for the family, it’s the only thing that works. If I don’t meal plan, dinner doesn’t get made. Or, we end up having breakfast for dinner or whatever leftovers we can find in the fridge. Door to Door Organics makes meal planning a breeze! The Asparagus Salad I’m sharing in this post all came about because I couldn’t wait to use the beautiful asparagus in our box last week. It just doesn’t get any better than having one place to visit (while at home), meal plan, and shop and then have the groceries delivered to your door! My groceries typically come while I’m at the gym working out. Not having to do the shopping on my own saves me so much time. The prices are competitive enough to keep me ordering!
Each week when meal planning I try to come up with an entree or side that we haven’t yet had. Asparagus is one of my favorite veggies, but Matt and the kids shy away from it. So I’m always trying to come up with ways to use it, in which they’ll like it. Just the other day I made this Asparagus Salad with Feta, Tomatoes & Kalmata Olives and instantly fell in love. It’s the perfect side dish for spring & summer meals, full of flavor and color.
Asparagus Salad with Feta, Tomatoes & Kalmata Olives
- 1 Bunch Asaparagus
- 1/8 cup Kalmata Olives
- 1/4 cup Cherry Tomatoes
- 1/4 cup Feta Cheese
- 1 tsp Olive Oil
- Boil the Asparagus in a pot for 5 minutes. Remove immediately and run under cold water. Slice the olives, and cherry tomatoes and place in a small bowl. Combine the olives and tomatoes with the feta cheese and mix well.
- Lay the asparagus on a plate and top with the olive, tomato, feta mix and then drizzle with olive oil.
You’ll love the Asparagus Salad! It’s so quick and easy to make too and would be great to take to a summer time party or picnic.
