It’s October, which also means that everywhere you go everything is PUMPKIN! I’ve been craving a pupmkin spiced latte, some pumpkin cookies with cream cheese frosting and a big slice of pumpkin pie. But, I’ve also been busting my butt at the gym five days a week. So there’s no way I’m giving in and sacrificing all of my hard work just for some sugar & chemical filled foods. That doesn’t mean that I’m going to miss out on the good stuff though, which is why I whipped up these Pumpkin Chocolate Chip Protein Bites. A simple, healthy recipe that can be made in just minutes.
Our family is so crazy busy this time of year that it’s ideal to have snacks made ahead of time to grab and go. That’s one thing I love about these Pumpkin Protein Bites! Not only are they super quick & easy to make, but they’re also a great snack to take on the go. And, they’re loaded with healthy goodness, and the kids won’t even realize that!
1 cup Old Fashioned Oats
1.5 tbsp Pumpkin Pie Spice
2 scoops Gold Standard 100% Whey Protein Powder (Vanilla)
1/2 cup NESTLÉ® TOLL HOUSE Semi-Sweet Mini Morsels/ Chocolate Chips
1 tbsp Chia Seeds
2 tbsp Honey
1/2 cup organic Pumpkin Puree
1/2 cup all natural chunky Peanut Butter
In a mixer, combine the oats, protein powder, pumpkin pie spice, and chia seeds. Stop the mixer and add in the honey and pumpkin puree. Turn the mixer back on and slowly add the peanut butter. Once the ingredients are all mixed well, add the Mini Morsels and mix for an additional 15-30 seconds.
Line a baking sheet with wax or parchment paper. Scrape the sides of the bowl with a spatula. Your mixture should all be in a big ball. From there take 1 tbsp sized scoops and shape into balls. I rubbed a bit of coconut oil on my hands to keep the ingredients from sticking to them. When all of your mixture has been formed into balls, place the baking sheet in the refridgerator for 15-30 minutes. Remove and store the protein bites in an air tight container for up to one week.
These Pumpkin Chocolate Chip Protein Bites each contain 80 calories, 8 carbs, 4g fat, 4g protein and 4g sugar. Four grams of protein is awesome and I don’t feel guilty eating them or giving them to my kids. Plus, the kids love them!
Whenever I decide to make something new, the kids are always on my mind. I try to create something that is not only healthy, but that they’ll like and might introduce them to something new or different. Adding ingredients like chia seeds for extra protein works great, because they are likely to not even notice them in there. And when they see something like mini chocolate chips, even if there aren’t all that many in the recipe, they’re more likely to be willing to try it out. Typically they like what I make and end up asking for it again & again. That keeps mom happy, especially when it’s something that’s good for them!
